Preheat the grill element in your oven.
Place the rashers onto a roasting tray and place under the grill, turning once, until crispy on both sides. Cut into bite-size pieces and keep to one side.
Cut the pita breads in half and then cut each half into quarters, creating thin triangles. Arrange on a baking tray, season and drizzle with olive oil. Pop under the grill to lightly toast them (keep a watchful eye!).
In a salad bowl, toss the bacon, lettuce, tomatoes, onion and pita toasts together. Drizzle lightly with extra virgin olive oil and season with salt and pepper. Serve with creamy mayonnaise.
