
Best Diggedy Dawgs: Hot Dogs with Homemade Sweet Chilli Sauce

Ingredients
12 Frankfurter sausages, slashed 5 or 6 times with a sharp knife
Best Homemade Sweet Chilli Sauce
100 g red chillies, seeded and finely chopped
1 C (250 ml) vinegar
1 C (210 g) castor sugar
1 Tbsp (15 ml) cornflour
¼ C (60 ml) water
tomato ketchup
mustard
mayo
fried onions
rocket
Method
Sweet Chilli Sauce
Put all of the ingredients into a saucepan over medium heat and simmer for about 40 minutes until the sauce has thickened.
Reduce the heat; mix the cornflour with cold water to a smooth slurry. Stir into the sauce. Cook very gently for a couple of minutes.
Remove from the heat, allow to cool slightly and then pour into sterilised, airtight jars.
Hot Dogs
Pre-make the braai fire. When the coals are hot and the flames have died down cook the ‘furters over fairly gentle heat until they are hot right through, the slashes have opened up and they have a good colour. (The ‘furters can of course, be cooked in gently simmering water for about 5 minutes instead).
Invite everyone to the table to make up their own Best Hot Dog Ever and prepare to lick those sticky fingers.
