Beetroot, Blue Cheese, Caramelised Onion and Baby Greens Sandwich


This is an amazingly combined sandwich with the most delectable flavours. Lunch will never be the same after this!

  • 4–6 beetroot
  • Olive oil, for frying
  • 4 onions, sliced
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • 1 wedge (125 g) blue cheese
  • 1 packet (100 g) assorted baby greens

Boil the beetroot until soft and peel away the outer skin. Keep to one side to cool before slicing.

Heat the olive oil in a large frying pan, add the onions and season to taste with sea salt and freshly ground black pepper. Fry until golden and caramelised.

Place the beetroot and onions on bread, crumble some blue cheese on top and finish with the baby greens.

Enjoy with a glass of ice cold Rosé on a hot Summer’s day.
