Mince Filling

olive oil
200 g diced bacon
1 large onion, chopped
1 small red pepper, deseeded and chopped
1 small yellow pepper, deseeded and chopped
1 small green pepper, deseeded and chopped
2 garlic cloves, chopped
1 Tbsp (15 ml) your favourite braai spice
500 g beef mince
330 ml beer
½ C (125 ml) tomato sauce
½ C (125 ml) your favourite BBQ sauce
¼ C (60 ml) Worcestershire sauce
1-2 Tbsp (15-30 ml) chilli sauce
1 Tbsp (15 ml) sugar
juice of 1 small lemon
salt and pepper

Slaw, Rolls & Chips 

2 baby green cabbages, finely sliced
2 spring onions, sliced
2-3 Tbsp (30-45 ml) mayonnaise
zest and juice of 1 small lemon
salt and pepper
6 large hamburger rolls, sliced, buttered & toasted
salted potato chips to serve (optional)

Mince Filling

Set the pot from your Stanley Full Kitchen Base Camp Cook Set over medium-high heat and heat a glug of olive oil. Add the bacon and fry until it has released all of its moisture and starts to fry. Add the onions and peppers and fry for 5 minutes until softened. Add the garlic and braai spice and fry for a minute until fragrant. Add the beef and stir fry until it has released all of its moisture and starts to fry. Fry for 5 minutes to brown, then add the beer, tomato sauce, BBQ sauce, Worcestershire sauce and chilli sauce and mix to combine.

Bring to a boil, then reduce the heat (if using gas) and simmer for 15-20 minutes or until the liquid has reduced and the mince has a thickish consistency. If it is too soupy your Sloppy Joes will be too sloppy to handle, so let the moisture cook out. Season to taste, then add the sugar and lemon juice; taste again and adjust the seasoning.

Slaw, Rolls & Chips 

For the slaw, combine the cabbage, spring onion, mayo, zest and juice in a bowl; mix well and season to taste.

To assemble, give each toasted roll a generous helping of mince and serve with a side of green slaw for freshness and chips for crunch.
