4–6 large juicy, ripe plums, halved and de-pipped
½ C (125 ml) flour
3 Tbsp (45 ml) brown sugar
¼ C (60 ml) oats
50 g butter, chilled and cubed
4 ginger biscuits, finely crushed
¼ C (60 ml) orange liqueur, to serve (optional)
vanilla bean ice cream, to serve

Preheat the oven to 180 °C.

Place the halved plums, flat side up, onto a baking tray and set aside.

Place the flour, sugar and oats into a bowl and, using your fingers, rub in the butter until the mixture resembles breadcrumbs.

Top each halved plum with a little of the crumble mixture and sprinkle generously with some crushed ginger biscuits.

Bake in the oven for about 15–20 minutes or until the plums have softened and the crumble is crispy and golden.

Serve warm, with a little orange liqueur drizzled over the plums and a serving of vanilla bean ice cream.
