Baked Camembert with Roasted Figs, Hot Honey & Caramelised Spiced Nuts
This camembert dish is the perfect dinner party starter; bake 'til gooey, top with roasted figs, crunchy nuts and hot honey drizzle and enjoy.

Ingredients
Caramelised Nuts
200 g mixed nuts
1 Tbsp (15 ml) butter
1 tsp (5 ml)mixed spice
Hot Honey
¼ C (60 ml) honey
Figs and Cheese
8 ripe figs, quartered
Melba toast to serve
Method
Preheat the oven to 180 ºC.
Caramelised Nuts
Set a large non-stick frying pan over medium-high heat. Add all the ingredients for the caramelised nuts to the pan. Stir constantly as the ingredients melt together and cook for around 6 minutes until the sugar has caramelised and coated the nuts. Transfer the caramelised nuts to a sheet of baking paper on a tray and spread it out to cool. Once cool, crack apart and roughly chop.
Hot Honey
Heat the honey in a microwave-proof bowl for 30 seconds then whisk in the Tabasco.
Figs and Cheese
Line a baking tray with baking paper. Drizzle the cut figs with honey and place them onto one side of the tray.
Very lightly score the top of the cheese in a diamond pattern and place it onto the other side of the tray.
Place the tray into the oven and bake for 15-20 minutes or until you can see the cheese just beginning to ooze from the scores. Remove from the oven and transfer the cheese to a serving platter. Top with warm figs and crunchy nuts and finally drizzle with hot honey and serve immediately with Melba toast.
