Baby Spinach Salad


Nothing says perfect salad like a nice citrus dressing, fresh spinach leaves and parmesan shavings.

40 g crispy leeks (1 fresh leek)

40 ml olive oil

140 g baby spinach

1 Tbsp (15 ml) olive oil

2 Tbsp (30 ml) citrus juice (lime/lemon juice)

black pepper

50 g Parmesan cheese

40 g dry miso powder

Cut the leek into a 2 cm piece and then very finely julienne. Blanch the leeks in boiling water for 1 minute, remove and dry with kitchen towel to remove all of the water.

Heat the oil to 160 ºC. Fry the leeks until golden and crispy. Remove and drain on a sheet of kitchen towel.

Place the baby spinach into a bowl, dress with olive oil and citrus juice.
