36 large spears green asparagus, peeled using a vegetable peeler (avoid damaging the tips)

2/5 C (100 ml) sparkling wine

2 Tbsp (30 ml) crushed fresh ginger

2 Tbsp (30 ml) strained fresh lemon juice

5 Tbsp (75 ml) sugar

2 tsp (10 ml) toasted sesame seeds

Boil the asparagus in rapidly boiling water for 4 minutes, being careful not to damage them. Remove and refresh in ice water.***

In a separate pan, bring the sparkling wine to the boil, add the ginger and allow to infuse until the liquid has halved. Add the lemon juice and sugar and stir until the liquid becomes syrupy.

Place the asparagus on a serving dish and drizzle the glaze over the spears.

Lightly toast the sesame seeds in a warm, dry pan and sprinkle over the glazed asparagus.

***If the asparagus is to be served hot, then use the following version of the recipe:

In a small saucepan, bring the sparkling wine to the boil, add the ginger and allow to infuse until the liquid has halved. Add the lemon juice and sugar and stir until the liquid becomes syrupy.

Boil the asparagus in rapidly boiling water for 4 minutes, being careful not to damage them. Drain and immediately place the asparagus on a warmed serving dish. Drizzle the hot glaze over the spears.
