Asparagus, Mozzarella & Parma Ham Parcels

Dressing

½ (80 g) red onion, roughly chopped
2 Tbsp (30 ml) capers
1 tsp (5 ml) Dijon mustard
¼ C (60 ml) red wine vinegar
⅓ C (80 ml) orange juice
⅓ C (80 ml) olive oil

Parcels

4 slices of Parma ham
16 thin asparagus spears, blanched
150 g fresh bocconcini or buffalo mozzarella balls, sliced
olive oil, for frying
micro herbs, to garnish

Dressing

Place the onion, capers, mustard, vinegar and orange juice in a food processor and blend until finely chopped. Keep the motor running while you slowly add the oil in a steady stream. Season to taste and set aside.

Parcels
Place a slice of Parma ham flat on a clean surface. Place 4 asparagus spears on one end. Add 2 or 3 slices of bocconcini or mozzarella and then gently roll up to form a parcel.

Heat a little olive oil in a heavy-based frying pan over medium heat. Fry the parcels for 2 minutes until the Parma ham crisps and the cheese melts.

Serve warm with dressing on the side and garnish with some micro herbs.
