
Asparagus & Avocado Gazpacho
Maybe it’s the voluptuous shape of the avo that lends it an aphrodisiac quality? Science says that it’s the high concentration of vitamin E that does it.

Ingredients
Gazpacho
250 g fresh asparagus
1 spring onion, chopped
¼ cucumber, diced
½ avocado, peeled and sliced
1 garlic clove, crushed
1 lime, juiced
15 ice cubes
sea salt and freshly ground black pepper
To Serve
olive oil for drizzling
micro radishes
watercress
Method
Bring a saucepan of water to the boil and blanch the asparagus for 5 minutes. Remove from the saucepan
and plunge into a large bowl of ice water to stop the cooking process.
Drain well and place the asparagus into a food processor with the rest of the ingredients and blend well. Taste and adjust the seasoning.
To serve
Drizzle with olive oil and serve garnished with micro radishes and watercress.
