Asian Pork Belly Served On Noodles

  • 2 kg pork belly, skin and excess fat removed
  • 1 large clove garlic
  • thumb-sized piece of fresh ginger, grated
  • 1 medium red chilli (not too hot), finely chopped
  • 2/5 C    honey  100 ml
  • 2/5 C    soy sauce         100 ml
  • 2/5 C    sweet chilli sauce        100 ml
  • 1 Tbsp wholegrain mustard     15 ml
  • 400 g rice noodles, for serving
  • 6 spring onions, for garnishing

Preheat the oven to 180 °C.

Cut the pork belly into large chunks of about 3 x 3 cm. Place in an ovenproof dish.

In a separate bowl, mix the garlic, ginger, chilli, honey, soy sauce, sweet chilli sauce and wholegrain mustard. Pour over the pork and place, uncovered, in the preheated oven. Bake for 1½ hours until sticky and brown.

To serve, prepare the rice noodles according to package instructions, place the pork on top and pour the sauce over. Garnish with spring onions and serve.
