Apricot & Pumpkin Seed Snack Bars
These are filling and healthy – making them perfect for lunch boxes.

1 ½ C (375 ml / 200 g) dried apricots
1 ¼ C (310 ml / 200 g) pitted dates
½ C (125 ml / 65 g) pumpkin seeds
1⁄3 C (80 ml / 50 g) sesame seeds
½ C (125 ml / 40 g) desiccated coconut
Line a rectangular (18cm x 18cm) tin with baking paper and lightly spray with cooking spray.
Place all of the ingredients into a food processor and whizz until blended but still a bit chunky. Tip the mixture into the prepared tin and press down evenly.
Refrigerate for at least 4 hours or overnight. Cut into bars and store in the fridge.
Tip: This mixture can also be rolled into balls. Simply roll into balls after blending and coat each ball with some desiccated coconut, finely chopped nuts or cocoa. Set in the fridge for an hour or two.
