4 Step Cheat’s Lemon ‘Cheesecake’
This easy-to-make lemon cheesecake will blow you away with its refreshingly sweet and citrusy taste!

1 packet tennis biscuits
1 L Greek or plain yoghurt
1 x tin condensed milk
zest of 1 lemon, finely grated
juice of half a lemon
extra zest for sprinkling on top
Crumble the tennis biscuits and mix with the butter to make the crust of the cheesecake. Press evenly into the bottom of a round microwave dish.
Mix the yoghurt, condensed milk, lemon zest and the lemon juice together in a bowl.
Pour the mixture over the tennis biscuit crust and microwave on high for 4 minutes.
Allow to cool for a few minutes and then place it in the fridge for 24 hours to set.
