
Bánh Mì Inspired Halloumi Sandwich

Description
A tasty vegetarian take on a Vietnamese street food staple. Filled with two tasty halloumi patties and all the green goodness you could ask for.
Ingredients
Pickles
¾ C (180 ml) rice vinegar
2 Tbsp (30 ml) sugar
1 tsp (5 ml) salt
1 medium carrot, cut into thin sticks
1 medium piece of cucumber, cut into rounds
1 jalapeño chilli, sliced
Avo Smash
1 large avocado
a squeeze of lemon juice
salt and pepper
Sauce
¼ C (60 ml) Hoisin sauce
1 Tbsp (15 ml) water
zest and juice of 1 lime
To Assemble
1 pack La Mont U’lloumi Griller Cheese Patties
2 oval buns, sliced and buttered
1 spring onion, thinly sliced
1 Tbsp (15 ml) sesame seeds, toasted
mayonnaise for drizzling
2–3 sprigs fresh coriander
Instructions
Pickles
Whisk the rice vinegar, sugar and salt together in a medium sized bowl until dissolved, then add the veggies and leave for at least 30 minutes to pickle.
Avo Smash
Scoop the avo flesh into a small bowl, then add the lemon juice and season to taste. Set aside.
Sauce
Mix the sauce ingredients together in a small bowl then set aside.
To Assemble
Pan fry the patties in a non stick pan over medium heat for 2-3 minutes per side or until golden. Alternatively air fry for 8 minutes at 180 °C.
Dollop the avo smash on the bottoms of the buns. Top with the patties, then drizzle with sauce and a little mayo. Top with pickled veggies, sliced spring onion, sesame seeds and fresh coriander and serve.
