For John Loubser, Silverthorn, was a dream which started in 1999 when he and his wife Karen, took this farm in the Robertson Valley over from her late dad. The challenge was to transform this farm into an exclusive boutique winery in their free time.
John was the winemaker at Graham Beck at that time and discovered his passion for Method Cap Classique whilst working under the mentorship of Pieter Ferreira. On the nose: fresh aromas of green apple and acacia blossom, greets your nose with a summery scent.
On the palate: subtle hints of minerality and whiffs of freshly baked brioche. the fine mousse creates a gentle explosion of bubbles on the palate and has a long finish.
