Even though the farm is situated in the Hemel and Aarde, the grapes for Rose of Sharon are sourced from Walker Bay and Elgin for their specific flavour profiles. This sparkling wine is made in the traditional bottle fermented Champagne method, and is a blend of 75% Pinot Noir and 25% Chardonnay. It is made in the siagnée style whereby juice is ‘bled off’ the press once the desired colour has been achieved, resulting in beautiful, soft pink bubbles. A small portion of the juice is fermented in barrel to add extra complexity and once the first fermentation is complete, the final blend is made and bottled. After the second in bottle fermentation is complete it rests for another 3 years on the fine lees, in the bottle, before disgorgement.
On the nose: wine is packed with fresh delicate berry flavours. a hint of rose water and a subtle lime finish. This is the perfect wine to celebrate love at sunset or even at sunrise.
