Watermelon Refresher Lollies

3 C watermelon, peeled and deseeded (about ½ watermelon)
½ C (125 ml) coconut cream or yoghurt
2 kiwifruit, peeled
3 mint leaves
2 spinach leaves
Blend the watermelon flesh to make a juicy purée and strain out the pulp. Pour into the ice cream moulds and leave to set for about 1 hour.
When the watermelon layer is just set, pour a small layer of coconut cream or yoghurt on top of the watermelon layer. Place back in the freezer for about 1 hour.
Blend the kiwi fruit, mint and spinach leaves with a splash of water to make a purée. When the yoghurt layer has just set, pour over the kiwi layer, and then insert the wooden lolly stick. Leave to set for at least 5 hours, or overnight.
