Use NoMU’s Vanilla Cookie Kit to form the base of these tartlets, fill with a zingy lime mousse and you’ll have a lovely dessert for a summer’s day.

Vanilla Cookie Base

1 x NoMU Vanilla Cookie Kit

225 g unsalted butter, softened

Lime Mousse

juice and zest of 5 limes

¼ C (60 ml) castor sugar

2 C (500 ml) double thick cream

1 extra lime, for garnishing

10 mini tart tins (6 cm diameter)

Vanilla Cookie Base

Preheat the oven to 180 °C.

Grease the tart tins.

Make the NoMU Vanilla Cookie Kit mixture as per the instructions on the box.

Divide the dough into ten balls and press into the prepared tins, ensuring that you cover the sides and bases evenly.

Line the tart shells with baking paper and fill with ceramic baking beans or rice. Bake blind for 10 minutes until the pastry is golden brown and cooked through. Remove from the oven and remove the beans/rice and paper and set aside to cool.

Lime Mousse

Whisk together the lime zest, juice and sugar and then fold in the double thick cream. Pour the mixture into the pastry cases and refrigerate for 1 hour to set.

Garnish with lime slices and a sprinkling of lime zest and serve.
