Spinach, Lamb & Feta Gözleme


Gözleme is a savoury traditional Turkish flatbread, made of hand-rolled dough that is lightly brushed with butter and eggs.

Dough Ingredients
500 g cake flour
1 tsp (5 ml) salt
50 g butter, grated
1 1⁄3 C (330 ml) warm water

Filling Ingredients
1 Tbsp (15 ml) olive oil
½ onion, finely chopped
1 Tbsp (15 ml) garlic, crushed
120 g spinach, shredded
300 g lamb meat, shredded (left-over leg of lamb or lamb shank meat is perfect)
150 g plain feta, crumbled
olive oil
lemon wedges, to serve

Dough Method

Combine the flour and salt in a mixing bowl.  Use your fingers to rub in the grated butter.  Add the water and mix to combine.

Knead on a lightly floured surface for 8 -10 minutes. Cover with plastic wrap and place in the fridge to rest overnight or for at least 7 hours.

Filling Method

Heat the olive oil in a saucepan over medium heat; add the onion and sauté for 15 minutes until tender.

Stir in the garlic, spinach and lamb meat. Fry for 5 minutes. Remove from the heat, stir in the crumbled feta and season it to taste.

To Assemble

Divide the dough into 6 equal pieces. Roll each piece into a rectangular shape of about 20 cm x 15 cm with a rolling pin. Add the filling to one side of the dough, leaving a 1 cm clear border. Fold the other half of the dough over the filling and seal the edges with a rolling pin. Continue until you have 6
stuffed flatbreads.

Heat a griddle pan until hot. Brush each flatbread with some oil and then grill on the hot griddle pan for a minute or two on each side, until lightly charred.

Heat a clean frying pan over medium heat and continue to fry the breads until crisp and golden.

Serve the breads hot with lemon wedges.
