Salted Caramel Popcorn
A sprinkling of salt perfectly balances the sweet caramel; with its crunchy texture this popcorn is a yummy treat or great gift.

2 C (500 ml) castor sugar
1 Tbsp (15 ml) butter
4 C popcorn, popped
Maldon sea salt, for sprinkling
Line a baking tray with foil and grease well.
Place the sugar into a medium sized saucepan over a medium to low heat.
Allow the sugar to melt without stirring it until it turns a deep amber colour.
Tilt the pan to help the sugar to melt evenly but be careful not to over-stir as the sugar can crystallise.
Once the sugar has completely melted and has turned a golden caramel colour, add the butter and quickly stir through the popcorn.
Pour all the popcorn out onto the greased baking tray and allow to cool completely.
Sprinkle with a generous amount of Maldon salt and serve.
