  • 500 g beef fillet
  • 5ml freshly ground black pepper, plus extra to taste
  • 1 Tbsp (15 ml) olive oil
  • 1 C (250 ml) sour cream
  • 2 Tbsp (30 ml) freshly grated horseradish
  • Sea salt to taste
  • Sugar to taste
  • 50 g watercress

Preheat the oven to 230 °C.

Rub the fillet with pepper and olive oil and roast for 15 minutes. Keep to one side until cool, then slice. Beat the sour cream until soft peaks form and add the horseradish, salt, pepper and sugar.

Spread generous amounts of the horseradish cream on fresh bread. Add some slices of beef and top with watercress. Enjoy with a glass of good red wine.
