This tasty condiment works well to add a bit of sweetness to any main meal.

1 kg lemons, cut into wedges
2 Tbsp (30 ml) sea salt
1 Tbsp (15 ml) brown sugar (heaped)
1 stick of cinnamon
2 bay leaves
1 tsp (5 ml) black pepper corns, lightly crushed
1 tsp (5 ml) coriander seeds, lightly crushed
3 C (750) ml olive oil
100 ml vinegar
1 Tbsp dried oregano (optional, but it gives a stunning look to the lemons)
1 tsp dried chilli flakes (optional)
Marinade the lemons in all of the ingredients (except the oil, vinegar and oregano) for a few minutes.
In a separate bowl, whisk the oil and vinegar to combine.
Transfer the lemon mixture into a beautiful, sterilised jar and top with the oil mixture.
Lastly, add the optional oregano and seal. Give the gorgeous flavours and aromas about a week to develop before enjoying your lemon preserve.
