Pineapple and Grapefruit Mojito
This mojito may not be entirely traditional, but it will definitely hit the spot on a warm summer afternoon.

1 pineapple, peeled, cored and cut into chunks
1 punnet fresh mint leaves
1-2 grapefruit, cut into quarters, juiced and wedges reserved
2 C (500 ml) good quality pineapple juice
2 C (500 ml) light rum
1 grapefruit, sliced and cut into quarters.
Using a food processor or hand held blender, puree the pineapple and add the pineapple juice and enough grapefruit juice to balance the pineapple’s sweetness.
In a large pitcher wide enough to fit a muddler or a wooden spoon, add the mint, and leftover grapefruit wedges. Crush the leaves, muddling it really well. Alternatively, muddle the ingredients in a mixing bowl and transfer to the jug or pitcher you’re using to serve.
Add the pineapple mix, and rum and top up with soda water.
Pour over ice, and garnish with more mint, and grapefruit slices.
Food fact: A muddler is a bartender’s tool used to breakdown (mash) ingredients in a drink such as fruits, herbs or spices. This helps release the flavour from these elements into the drink.
