Passion Fruit & Ginger Iced Tea

This refreshing ginger and passion fruit drink is a perfect thirst quencher for a hot summers day.

4 C (1 litre) water

½ C (125 ml) sugar

5 thick slices (30g)
of fresh ginger

6 green tea bags

2 C (500 ml) passion fruit juice

1 C (250 ml) passion fruit pulp

Ice, to serve

Fresh mint for garnishing

Combine the water, sugar and ginger in a saucepan and bring it to the boil. Let it simmer for 2 minutes and stir until the sugar has dissolved.

Remove from the heat and add the tea bags. Let them steep for 30 minutes, then strain the mixture and allow it to cool.

Once the mixture has cooled, stir in the juice and passion fruit pulp.

Serve the iced tea over plenty of ice, garnished with the fresh mint.

Tip:

If you are taking the iced tea on a picnic, pour it into a flask along with some ice. Keep it cool by storing it in a cooler box while traveling.
