Cheesecake is a classic and a NY-style one is beautiful in its simplicity.

Base
1 ¼ C (310 ml)finely crushed Marie biscuits
¼ C (60 ml) brown sugar
5 Tbsp (75 ml) melted butter

Filling
2 ½ C (625 ml) cream cheese, softened
2 tins (2 x 385 g) condensed milk
10 eggs
½ C (125 ml) all-purpose flour
2 vanilla pods, seeds scraped
1 tsp (5 ml) good quality vanilla extract
sliced fresh strawberries, for garnish
whipped cream, for garnish

Base
Preheat the oven to 160 ºC. Wrap the bottom of a 23 cm springform cake tin with heavy duty tin foil, grease and set aside.
Mix the crushed Marie biscuits, melted butter and sugar together until combined. Pour into springform pan and press down evenly over the bottom of the tin.

Filling
In a large mixing bowl beat the cream cheese until fluffy. Slowly add the condensed milk and beat until smooth. Add the flour, eggs and vanilla pod. Whisk until smooth. Pour the mix into the biscuit lined tin.

Place the cake tin into a shallow baking pan. Place the pan into the preheated oven and 2 cups of boiling water into the outer pan.  Bake for 2 hors (until a firm jiggle in the centre of cake has formed or slightly browned) turn off the oven and leave for a further 15 minutes. Then removed from the oven and cool in the fridge.

When ready to serve, release the springform pan, slice and serve with fresh strawberries and a dollop of whipped cream.
