Matcha Green Tea and Kale Soup
A healthy soup boosted with the power of Matcha Green Tea.

2 Tbsp (30 ml) olive oil
1 medium onion, chopped
1 medium potato, peeled and chopped
1 stalk celery, thinly sliced
3 cloves garlic, minced
1 cm piece of ginger, peeled and finely grated
¼ tsp (1.25 ml) cayenne pepper
freshly ground black pepper
180 g fresh kale, chopped
6 C (1.5 litre) vegetable stock
1 Tbsp (15 ml) matcha green tea powder
1 medium zucchini, julienned
1 Tbsp (15 ml) fresh parsley, finely chopped for garnish
crusty bread, for serving, optional
In a large saucepan, heat the olive oil and sauté the onion, potato and celery. Cook for about 8 minutes, stirring occasionally and adding a little water if necessary to prevent the vegetables from sticking.
Stir in the garlic, ginger, cayenne pepper and black pepper and sauté for another minute or two.
Stir in the kale and cook for a few minutes, then add the vegetable stock and matcha green tea powder. Bring the soup to a boil, turn the heat to a gentle simmer, cover and cook for about 15 minutes.
Add the zucchini and cook for 1 minute. Garnish with fresh parsley and serve with crusty bread (optional).
