Grilled Marinated Brinjal
These grilled marinated brinjals are easy to prepare and to serve as an appetising starter for any occasion.

For the Brinjals
4 large brinjals
100 ml olive oil
For the Marinade
2 Tbsp (30 ml) parsley, roughly chopped
3 sprigs thyme
1 bay leaf
40 ml lemon juice
100 ml extra virgin olive oil
crushed black pepper
To Make the Brinjals
Slice the brinjals into 1 cm disks and sprinkle with sea salt and leave to stand for 30 minutes to extract the bitterness. Wash, drain and dry the brinjals slices.
To cook, either grill or pan-fry.
To grill – preheat the oven to 200 °C, lightly brush the slices with olive oil and place on a baking tray in a single layer. Grill for 20 minutes or until cooked through.
To pan fry – heat a splash of olive oil in a frying pan, fry the slices over a medium-high heat until golden brown on each side.
To Make the Marinade
Combine all of the ingredients for the marinade and season to taste.
Place the grilled/fried brinjals into the marinade and serve.
