Green Tea Onion & Potato Soup

Irresistibly creamy onion and potato soup is sure to be a crowd pleaser.

2 medium onions, peeled

and cubed

a knob of butter

3 medium potatoes, peeled and cubed

3 C (750 ml) Green tea

1 C (250 ml) vegetable stock

½ C (125 ml) fresh cream

sea salt and white pepper

Gently fry the onions in the butter until tender and soft and slightly caramelised, but not darkened. Add the cubed potatoes, green tea and vegetable stock and simmer until the potatoes are soft.

Remove from the heat and add the cream. Season with salt and pepper. Blitz in a blender until smooth. Adjust the seasoning if necessary. Serve hot as a comfort meal or cold as an elegant starter.

Tip:

Instead of frying the onions, mix them with the butter and microwave on high for 2 minutes.

If not yet soft and translucent, microwave for a further minute.
