Garlic & Sage Wild Mushrooms on Toast
Garlic and Sage Wild Mushrooms on Toast is simple dish to prepare but if you use quality ingredients it's heaven in every mouthful.

150 g exotic mushrooms, sliced or torn
100 g button mushrooms, thinly sliced
2 cloves garlic, crushed
6 sage leaves, roughly chopped
zest and juice of 1 lemon
salt and freshly milled black pepper
10 g fresh parsley, roughly chopped
1 ciabatta, thinly sliced and toasted
Heat a little olive oil in a large frying pan and sauté the mushrooms over a high heat until almost cooked and golden brown.
Add garlic, sage and lemon zest and fry for a further minute or two, being careful not to burn the garlic.
Add the lemon juice and season with salt and pepper to taste. Remove from the heat and stir through the chopped parsley.
Place spoonfuls of sautéed mushrooms onto the toasted ciabatta slices and serve immediately while still warm.
