French Toast with Quorn Vegan Savoury Pieces
This meal can be enjoyed at any time of the day, ideal for lunch or a light supper.

For the Creamed Kale
200 g curly kale
2 Tbsp (30 ml) olive or coconut oil
½ (90 g) red onion, finely chopped
2 tsp (10 ml) garlic
2 tsp (10 ml) cornflour
4 tsp (20 ml) Dijon mustard
1 C (250 ml / 220 g) coconut cream
¼ C (60 ml) vegetable stock or water
salt and pepper
For the Vegan Savoury Pieces
1 Tbsp (15 ml) olive or coconut oil
1 x 280 g Quorn Vegan Savoury Pieces
1 tsp (5 ml) garlic, finely chopped
½ tsp (2.5 ml) smoked paprika
pinch of cayenne pepper
1 tsp (5 ml) water
salt and pepper
For the French Toast
2 C (500 ml) almond milk
¼ C (60 ml) chia seeds (can be used whole or ground, if preferred)
olive or coconut oil, for frying
8 thick slices of 1-day-old vegan-friendly bread
1 ¾ C (430 ml / 250 g) peas, cooked
handful of pea shoots, to serve
To Make the Creamed Kale
Pull the leaves off the kale stems and cut into fine strips. Heat a saucepan over medium heat. Once hot, add the oil, kale leaves and onion. Gently sauté for 5-10 minutes until wilted and tender. Stir in the garlic. Whisk in the cornflour, mustard, coconut cream and stock/water. Cook for 5 minutes until slightly thickened. Season to taste.
To Make the Vegan Savoury Pieces
Heat a frying pan over medium heat. Once hot, add the oil and Quorn Vegan Savoury Pieces. Fry for 12 minutes. Add the rest of the ingredients and cook for another minute. Season to taste with salt and pepper.
To Make the French Toast
Whisk the almond milk, chia seeds and a pinch of salt together. Leave to stand for 10 minutes. Heat a non-stick frying pan over medium heat. Once hot, add a splash of oil.
Dip each bread slice into the almond milk/chia mixture and fry for about 1 minute on each side, until golden.
Place a slice of French toast onto each serving plate. Add a dollop of creamed kale and then scatter peas and Quorn Vegan Savoury Pieces on top.
Repeat with a second layer and garnish with pea shoots.
TIP: The chia batter works well for sweet French toast recipes too. Add 2 tsp (10 ml) sugar to the batter and serve topped with fried bananas, chopped nuts and raspberries. Drizzle with maple syrup or agave nectar for extra sweetness.
