El Burro Chorizo Quesadilla with Corn Tortillas
A quick and easy Mexican inspired dish - great for entertaining.

130 g chorizo, chopped
100 g mixed cheese, grated
1 handful red onion, finely diced
2 Tbsp (30 ml) coriander, chopped
tomatillo sauce, a slightly spiced salsa verde and a side salad, for serving
Preheat the oven to 180 °C.
Fry the pieces of chorizo over moderate heat.
Place cheese on top of the 3 corn tortillas and bake in the oven until the cheese has melted.
Sprinkle the onion, chopped coriander and chorizo onto the tortillas.
Fold the tortilla over and place on the plate.
Serve with a ramekin of tomatillo sauce, a slightly spiced salsa verde and a side salad.
