Chicken Chorizo & Olive Bake
This easy to prepare dish combines Mediterranean flavours and propels a regular chicken casserole to new heights.

8 chicken pieces, on the bone
1 tsp (5 ml) NOMU Chicken Fond stirred into ½ C (125 ml) hot water
½ C (125 ml) white wine
150 g chorizo, peeled and sliced
2 red onions, peeled and quartered
100 g black Kalamata olives, de-pipped
Preheat the oven to 180 °C.
Place the chicken pieces into a casserole dish, season with NOMU One for All Rub. Pour the chicken stock and white wine over the chicken pieces.
Bake for 30 minutes, then add the chorizo, red onion and olives and bake for a further 15 minutes.
Remove from the oven and serve with mash.
