The best fritters in town!

4C steamed cauliflower
½C (125ml) grated pecorino cheese
4 Tbsp (60ml) finely chopped parsley
1 tsp (5ml) grated nutmeg
Salt and Pepper
Vegetable Oil, for frying.
½ C crème fraiche or thick Greek-style yoghurt
1 Tbsp horseradish cream or smooth Dijon mustard
1 Tbsp chopped chives
Roughly chop the steamed cauliflower and mix with the flour, eggs, cheese, parsley and seasoning. Add hot water sparingly if the batter is too thick.
Heat a pan to medium high and add 2 Tbsp vegetable oil. Spoon in the fritter batter and flatten slightly. Fry on both sides for 5-7 minutes and until golden brown. Be careful not to burn. Drain on paper towel. Serve immediately.
Mix the crème fraiche and horseradish cream with the chopped chives. Spoon onto the fritters to serve.
