Neil Ellis Cabernet Sauvignon
The Neil Ellis Cabernet Sauvignon is made in the Jonkershoek Valley, which is situated close to the south facing slopes are of the coolest sites in Stellenbosch. The vineyards are also influenced by southerly breezes during the summer months which has a beneficial effect. Further parcels of fruit are sourced from complementary sites within the Stellenbosch area.
Produced from Jonkershoek Valley fruit and further parcels of grapes sourced from complementary sites within the Stellenbosch area, the Neil Ellis Cabernet Sauvignon spent 18 months in a 25% 1st fill French oak barrel, the balance in 2nd, 3rd and 4th fill barrels. It is deep, dark garnet in colour with a bright ruby edge.
Mindful that no single vineyard can satisfy the needs of all grape varieties, Neil Ellis set out to identify distinct terroir in which individual varieties will excel. He placed the emphasis not only on the environment but also on caring viticultural practices by a dedicated team of growers which extends through to the winemaking practices.
Today the journey of Neil Ellis Wines is not only of Neil Ellis anymore. After four decades of making wine, the next stage of the journey has begun with Neil’s son, Warren, sharing responsibilities of winemaker and viticulturist in the pursuit of quality winemaking.
Aromas of currants, blackberries and plums follow onto a palate with compelling mouth-filling flavours of cherry and plum with some black pepper spice. This full bodied wine finishes with soft tannins and a hint of peppery cassis.
Neil Ellis Wines’ philosophy is to produce distinctive, refined wines that express the inimitable attributes of their terrain. Today the same philosophy remains their mainstay.
On the nose: bright aromatic sweet fruit with spicy varietal notes.
On the palate: fine, elegant, nicely framed attractive palate with cedar undertones.
