Smoked salmon is full of flavour and is rich in healthy fats. This recipe for a layered terrine is an inventive way of serving it.
Summer Beetroot Salad with a Herby Dressing
Baby beets are packed with flavour and are little nutrient bombs. They are a great source of folate, manganese, potassium dietary fibre, magnesium, phosphorus, vitamin C, iron and vitamin B6! Lightly dress with a herby dressing and serve with your favourite greens.
Grilled Trout with Poached Egg & Green Beans
Getting a poached egg just right is essential to this dish, the creamy yolk makes the perfect sauce for this perfectly grilled piece of fish. The grilled trout is an excellent source of healthy fats.

Egg salad is always a win, but if you’re cutting carbs, it’s hard to find a vessel to carry the eggy goodness. Switch out your crackers for crispy lettuce cups (baby gem or cos lettuce work best) for a lovely light lunch.

A beautiful, flavour-filled dish that makes use of a SASSI green-listed fish. It is an awesome fish to grill and stays moist and delicious.
Avocado Oil Hummus
Make your hummus at home so that you know exactly what goes into it. Use avocado oil to make it even more nutritious. Serve with healthy crudite for a tasty snack. Note: if you find raw garlic to smelly to snack on during the day, try roasting your garlic beforehand, it adds a wonderful caramelised flavour and mellows out the sharpness.
