Get to know Willow Creek Olive Estate

Situated in the Nuy Valley near Worcester in the Western Cape, Willow Creek Olive Estate produces a range of olive oils and associated products that derive their character, as with top wine vineyards, from the unique terroir. The regions lime-rich soil, availability of irrigation water and Mediterranean climate, with dry summers, cold winters and low average rainfall of 200mm per year, make it ideal for producing olives with a complex, appealing flavour profile.

Butternut & Goats Cheese Cigars with Creamy Olive and Chilli Pesto Dip

Willow Creek’s Chilli Olive Pesto is made from pounded black olives, with a touch of bird’s eye chilli for bite. Spread on your favourite crackers or use as is as a dip for cheese straws.

Start your Dinner Party off right

To start your meal off in a sophisticated way, try this recipe for phyllo cigars for the next time you entertain. Phyllo pastry is really forgiving, far more so than many other pastry types, making it really easy to work with. You can keep ready-made phyllo pastry in the freezer, so you can have it on hand if you need something on short notice.

The great thing about these cigars is that they can be made the day before and kept in the fridge, which is ideal if you want to spend time with your guests instead of in the kitchen prepping.

These crunchy phyllo cigars have been filled with a combination of goat’s cheese, butternut and pecan nuts and then baked to crispy, golden perfection. We’ve made a dipping sauce to go with them – a blend of Willow Creek Olive & Chilli Pesto, creamy double thick yoghurt and a drizzle of Willow Creek Cabernet Sauvignon Balsamic Vinegar. The pesto not only adds great olive flavour but a kick of subtle chilli as well. Swirl everything together and serve. Great as pre-dinner snacks or as a plated starter.

Using Willow Creek Fig Balsamic Vinegar

Plump and flavourful Parisian Figs grown on Willow Creek Olive Estate in the Nuy Valley are juiced and sweetened with grape must and then fermented in oak barrels to produce this exceptional Fig Balsamic Vinegar.

A Scintillating Main Course

Trout is a great ingredient to cook with as it lends itself to so many different flavour combinations. In this recipe, we’ve been inspired by Asian flavours; we love how simple this dish is to put together, making it the perfect n0-fuss main course for your dinner party.

We’ve used Willow Creek Fig Balsamic Vinegar, along with honey, plum sauce and soy sauce to create a zingy, sticky Asian-style glaze for the fish. The glazed trout is served atop a bed of fragrant Jasmine rice, with edamame beans to give a bit of crunch. Simple but so tasty – just the kind of entertaining we like.

Plum Cobbler with Chocolate Balsamic Sauce

Using Willow Creek Cabernet Sauvignon Balsamic Vinegar

Willow Creek Olive estate

This unique vinegar is handcrafted naturally in small batches on the Estate in the Nuy Valley using only the finest available Cabernet Sauvignon wine. And the proof is in the tasting: lingering full, ripe berry aromas on the palate and a fine balance between acidity and sweetness.

A Sweet & Chocolatey Ending

When you think of dessert, vinegar might not be the first ingredient that pops to mind but trust us, this one is a winner! Plums are just right for a hearty winter cobbler, as they stand up well to cooking. In this recipe, the Cabernet Sauvignon Balsamic Vinegar lends a tartness to the dish and, along with butter and sugar, creates a wonderful sauce as the fruit cooks in the oven.

The addition of a little Willow Creek Cabernet Sauvignon Balsamic Vinegar to the chocolate sauce helps balance the sweetness and subtly elevates the chocolatey notes. Drizzle over warm cobbler and serve with a generous dollop of cream. Yum! Your guests will love it, we guarantee.

Leading South African olive oil producer Willow Creek Olive Estate recently launched a South African foodie first, the Willow Creek Extra Virgin Olive Oil and Virgin Coconut Oil blend.

After carefully experimenting and crafting with virgin coconut oil sourced from a small-scale farmer in Mozambique, Willow Creek brings you the best of both in taste, health and convenience.  This product gives you all the health benefits of olive oil and coconut oil combined and what’s truly unique is it’s always in liquid form, even during the winter months. No more hard coconut oil, no more scraping that jar!

After Dinner Treasures

As your evening of entertaining draws to a close, you may want just one last bite to end a memorable meal – this exquisite shortbread is it. Traditionally, shortbread would be made with butter but this recipe uses Willow Creek Extra Virgin Olive Oil and Virgin Coconut Oil Blend which gives it a great texture.

A dash of rose water gives an aromatic Middle Eastern flavour to the shortbread that we just love. Once the cookies are cooled, add a drop of melted white chocolate and decorate with dried rose petals to finish them off with style. They’ll be perfect alongside a cappuccino or a cup of your favourite herbal tea.
